Dairy-Free Raspberry Lime Freezes

This refreshing treat is a cross between a frozen dessert and a smoothie. Double-check the ingredients in the sorbet or sherbet to ensure they are dairy-free if you're making this for someone with a food sensitivity.

  • 3 cups 3cupsfrozen raspberries, (do not thaw)
  • 1-1/2 cups 1-1/2cupsraspberry sorbet or rainbow sorbet or sherbet
  • 1 cup 1cupcoconut milk
  • 1 tbsp 1tbspchopped fresh mint
  • 1 tbsp 1tbsplime juice
  • mint leaves

In blender, combine 2 cups of the raspberries, sorbet, coconut milk, chopped mint and lime juice; pulse just until blended and smooth. Stir in remaining raspberries.

Pour into 4 glasses or bowls; garnish with mint leaves. Serve at once.
