This Swiss-inspired noodle dish is rich and satisfying. Canada's famous Oka cheese is a nice choice for this dish since it has a full flavour reminiscent of some Alpine cheeses of Switzerland. For a milder flavour, mix in some or use all Canadian Swiss cheese.

2 oz (55 g) mild pancetta or bacon, diced
3/4 tsp caraway or cumin seeds
4 cups thinly sliced onions
1 pinch salt
2 eggs
3/4 cup milk
1 pinch each pepper and nutmeg
2 cups shredded Canadian Oka cheese
