This rich, family-size popover could be made with another good melting cheese, such as Canadian Fontina, or a combination of cheeses to augment the flavour. Instead of the packaged frozen spinach, you can use 1 lb (500 g) fresh spinach, blanched, drained and chopped.

Ingredients

    4 eggs
    1 cup milk
    2/3 cup water
    1/4 tsp each salt
    Pinch each pepper and nutmeg
    1 1/3 cups all-purpose flour
    1 pkg (300 g) frozen chopped spinach, thawed and drained (or frozen leaf spinach, chopped)
    2 tbsp each vegetable oil and butter
    1 1/4 cups shredded Canadian Swiss cheese

Preparation

In large bowl, whisk together eggs, milk, water, salt, pepper and nutmeg; whisk in flour until smooth. Let stand for at least 20 minutes. Mix in spinach.

Meanwhile, place 9- or 10-inch (23 or 25 cm) cast-iron skillet or heavy 8- or 9-inch (2 or 2.5 L) square metal cake pan on centre rack of oven; heat to 450°F (230°C). Add oil and butter to skillet, swirling to coat when butter is melted. Immediately scrape in egg mixture; bake for 20 minutes.

Sprinkle cheese over top. Reduce heat to 350°F (180°C); bake for 10 minutes.

Makes 4 to 6 servings.
