These quick-and-easy hand-held quesadillas are inspired by anyone's favourite pizzeria. They are great served as an appetizer or as a main dish alongside a tossed salad. Try serving them with marinara sauce. Your can substitute your choice of sliced deli meat for the pepperoni.

Ingredients

  • 3/4 cup shredded Canadian mozzarella cheese 3/4 cup shredded Canadian mozzarella cheese
  • 2 large flour or whole wheat tortillas 2 large flour or whole wheat tortillas
  • 3 basil leaves , chopped3 basil leaves, chopped
  • 1/3 cup diced sweet red pepper 1/3 cup diced sweet red pepper
  • 1 green onion , finely chopped1 green onion, finely chopped
  • 2 tbsp chopped pepperoni 2 tbsp chopped pepperoni

Preparation

Sprinkle one-quarter of the mozzarella cheese on half of one tortilla. Top with 1/4 each of the basil, red pepper, green onion and pepperoni. Top with another quarter of the cheese; fold in half. Repeat with remaining tortilla.

In large nonstick skillet, toast tortillas on both sides until crisp, about 2 minutes per side. Cut each into 3 triangles.
