Easy, low-sugar way to preserve local fruit
When you make fruit compote, do not peel the fruits to retain the healthy fibre. Wait until all the fruits have been stewed before adding any sugar -- thus allowing time for the fruit's natural sugar to be released. By doing this, you cut down on the amount of sugar you will have to use in the recipe. Then purée with a hand blender and enjoy! My kids eat this by the bowlful.
