Ingredients

8 eggs, separated
1 cup (250 mL) milk
1/4 cup (50 mL) chopped fresh parsley
3 tbsp (45 mL) all-purpose flour
1/4 tsp (1 mL) each salt and pepper
Pinch ground nutmeg
1 cup (250 mL) shredded Canadian Swiss or Gruyere cheese
1/4 cup (50 mL) sliced cooked ham
Oven-Roasted Tomatoes:
4 cups (1 L) cherry tomatoes, halved
2 tbsp (25 mL) extra-virgin olive oil
1 tbsp (15 mL) balsamic vinegar
1/2 tsp (2 mL) each salt and dried basil
Pinch hot pepper flakes
Preparation
In large bowl, whisk together egg yolks, milk, parsley, flour, salt, pepper and nutmeg. Stir in cheese and ham; set aside.
In separate bowl, beat egg whites until stiff peaks form. Whisk one-third into egg yolk mixture; fold in remaining whites. Pour into 8-inch (2 L) square glass baking dish. Bake souffle and tomatoes in 400°F (200°C) oven until soufflle is puffed, dark golden and top is firm to the touch, and tomatoes are shriveled, about 30 minutes.
