Ingredients

    4 boneless pork loin chops (about 1-1/4 lb/625 g total)
    1/4 tsp (1 mL) each salt and pepper
    1/4 cup (60 mL) apricot or peach jam, melted
    4 rounds (1/2 inch/2 cm thick) cored peeled fresh pineapple
    4 oz (125 g) Canadian Brie cheese, cut into 4 pieces, at room temperature
    1/4 cup (60 mL) salted roasted cashews

Preparation

Sprinkle chops with salt and pepper. Grill, covered, on greased grill or in grill pan over medium-high heat for 4 minutes. Turn chops; brush with some of the jam. Add pineapple to grill; grill, covered, turning pineapple once and brushing chops with remaining jam, until juices run clear and a hint of pink remains inside chops, about 5 minutes.

Transfer pineapple and chops to plates; immediately top chops with cheese; let melt. Sprinkle with cashews. Makes 4 servings.
