Ingredients

4 oval (6 inches/15 cm long) buns
2 tbsp (25 mL) Dijon mustard
4 oz (125 g) each sliced mortadella, Genoa salami and Black Forest ham
2 tomatoes, sliced 1
8 slices Canadian Provolone cheese
Sandwich Relish:
1 cup (250 mL) drained pimiento-stuffed olives
2 cloves garlic, minced
1/2 cup (125 mL) chopped celery
1/4 cup (125 mL) finely chopped red onion
2 tbsp (25 mL) chopped fresh parsley
2 tbsp (25 mL) extra-virgin olive oil
1 tbsp (15 mL) capers, drained and rinsed
1 tbsp (15 mL) red wine vinegar
1/4 tsp (1 mL) each salt and pepper
Preparation
Slice olives; place in bowl. Add garlic, celery, onion, parsley, oil, capers, vinegar, salt and pepper; toss to combine.
Cut buns in half almost but not all the way through; spread with mustard. Layer bottom of each with 1/2 cup (125 mL) olive mixture, mortadella, salami, ham, tomatoes and cheese. Sandwich top over filling.
