Ingredients

6 new potatoes (1-1/2 lb/750 g)
1/3 cup (75 mL) extra-virgin olive oil
2 tbsp (25 mL) white wine vinegar
1 tbsp (15 mL) Dijon mustard
1/2 cup (125 mL) sliced red onion
4 oz (125 g) Canadian Brie cheese, cubed
Salt and pepper
4 cups (1 L) torn lettuce
6 radishes, sliced
2 tbsp (25 mL) minced fresh parsley
4 Italian sausages, cooked (such as mild or hot)
Preparation
Whisk together oil, vinegar and mustard; stir into potatoes. Sprinkle with onion and Brie. Warm over low heat until cheese softens, about 2 minutes; stir gently. Season with salt and pepper to taste.
Divide among 4 lettuce-lined plates. Garnish with radishes and parsley. Serve with sausages.
