In Mexico, a favourite taco is bistek, or steak, made with fried steak and toppings that usually include fresh cheese. Canadian cow's milk feta is quite similar to some of the fresh cheeses from Mexico and makes a delicious part of this salsa.

Ingredients

    1 lb (450 g) beef flank steak
    2 tbsp olive oil
    1 tbsp lime juice
    1 tsp dried oregano, crumbled
    1 tsp cider vinegar
    1 tsp Worcestershire sauce
    2 cloves garlic, pressed or pounded
    1/2 tsp each salt and ground cumin
    1/4 tsp each ground allspice, pepper and cinnamon
    1 large white onion, thinly sliced
    12 small corn or wheat tortillas

    Feta Cheese and Avocado Salsa:
    1 ripe avocado, pitted, peeled and finely diced
    1 tomato, finely diced
    3/4 cup finely diced cucumber
    3 to 6 tbsp finely diced pickled jalapeno peppers
    1-1/2 tbsp lime juice
    1-1/4 cups finely diced or crumbled Canadian Cow's Milk Feta cheese

Preparation

Slice steak on the bias across the grain into thin strips; place in bowl. Mix in 2 tsp of the oil, the lime juice, oregano, vinegar, Worcestershire sauce, garlic, salt, cumin, allspice, pepper and cinnamon; let stand for 10 to 15 minutes.

Feta Cheese and Avocado Salsa: In bowl, mix together avocado, tomato, cucumber, jalapeno peppers and lime juice; gently fold in cheese.

In large heavy skillet, heat remaining oil over medium heat; cook onion, stirring often, until golden, about 10 minutes. Push to side of pan; increase heat to medium-high. Add beef to other side of pan; saute until seared, about 2 minutes. Mix in onions; saute until steak is desired doneness, about 1 minute for rare, 2 to 3 minutes for medium-rare.

In dry skillet, heat each tortilla on both sides over medium heat. Top each with some of the steak mixture then some of the salsa.

Makes 4 to 6 servings.
