Ingredients

Preparation

In bowl, beat butter with sugar until fluffy; beat in egg yolk, lemon juice and salt. Stir in flour and ground almonds to make smooth dough. Stir in whole almonds.

Divide dough in half; roll each into 9-inch (23 cm) log. Wrap each and freeze until firm, about 1 hour.

Using serrated knife, cut each log into scant 1/4-inch (5 mm) thick slices. Place, 1 inch (2.5 cm) apart, on parchment paper–lined baking sheets. Bake in 350°F (180°C) oven until light golden, about 10 minutes. Let cool on pans for 5 minutes; transfer to racks and let cool completely.
