Pack-and-Go Chef's Salad

It's back-to-school time (and back to work) and, as everyone knows, it can be a challenge coming up with ideas for nutritious, delicious midday meals. So we buckled down, did our homework and came up with a collection of lunchtime salads using our favourite leafy greens, funky pasta shapes, and Canadian cheeses.

Salads: Fresh and tasty, salads are just the thing to get you through the day. (And some actually improve as they sit overnight.) For a fresh start to the week, try our tasty Pack-and-Go Chef's Salad with cubes of fresh vegetables, Canadian Swiss cheese and homemade Thousand Island Dressing. Everyone loves pasta salad, and Scoobi-do Jumble, with funky corkscrew pasta and cubes of Canadian Cheddar cheese, is sure to be a hit with kids. And don't forget bean salads, like our Chickpea Salad with Lemon-Cumin Vinaigrette, which is a real treat served with pita bread and crumbled Canadian cow's milk Feta. Beans add lots of texture and fibre to lunch, and like all these salads, are so easy to make.
