A quick marinade rounds out the flavour of the meat. If you like, top each serving with one of the Flavoured Butters or Aiolis.

Ingredients

  • 1/4 cup wine vinegar
  • 2 tbsp olive oil
  • 4 tsp Dijon mustard
  • 2 cloves garlic, minced
  • 1 tbsp chopped fresh rosemary or fresh thyme
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 lb marinating steaks, (about 1 inch/2.5 cm thick)

Preparation

In large shallow dish, combine vinegar, oil, mustard, garlic, rosemary, salt and pepper; add steak, turning to coat. Cover and marinate in refrigerator for 12 hours, turning occasionally. (Make-ahead: Marinate for up to 24 hours.)

Reserving marinade, place steak on greased grill over high heat; brush marinade over top. Close lid and cook for 6 minutes per side for medium-rare or until desired doneness. Transfer to cutting board; tent with foil and let stand for 5 minutes. Carve thinly across the grain on the diagonal.
