If you can’t beat 'em, join 'em! That’s exactly what Quebec City folk and about a million visitors do in the darkest, coldest part of winter. They frolic in the ice and snow with a larger-than-life snowman named Bonhomme de Carnaval. This bobbing jolly fellow with a woven red belt and toque is the mascot for the annual Quebec Winter Carnival, Canada's largest winter festival that‘s been making fun of our coldest season for the last 54 years. And with Quebec City celebrating its 400th birthday this year, Carnaval de Québec 2008 will be an extra special event!

Who is Bonhomme?
Bonhomme de Carnaval is the legendary host of the 17-day carnival (this year from February 1 to 17). He’s the finale to the carnival parades as he drops into events and hosts a family brunch and even an elegant ball at Quebec City's toniest hotel, the Fairmont Le Chateau Frontenac. His ice palace and even his ice bathtub are open for visitors to admire.

Can't attend the carnival this year? Don't worry - you can pay homage to Bonhomme with this Quebec-inspired menu and bring French Canadian flavours into your home.

Here's an elegant take on a Pea Soup - a French Canadian classic. Use frozen peas to make this Green Pea Vichyssoise and serve it warm for the winter.

Duck and Maple Syrup are delicious Quebec exports. Combined here in Cider and Maple Grilled Duck and served alongside potato Gratin Dauphinois provides the authentic taste of Quebec.
