This rich liqueur has an intense flavour that coffee lovers will savour. Sip it on its own or in mixed drinks, such as the White Russian Cocktail.

1 cup (250 mL) granulated sugar
1 cup (250 mL) brewed espresso
1-1/2 cups (375 mL) white rum
1/2 tsp (2 mL) vanilla
Preparation:
White Russian Cocktail
In saucepan, bring sugar and espresso to boil, stirring until sugar is dissolved; boil for 1 minute. Remove from heat; let stand for 10 minutes.
Stir in rum and vanilla; pour into jars and seal. (Make-ahead: Store in cool dark place for up to 3 months.)

Additional Information
- Tip: One cup (250 mL) brewed espresso is equivalent to eight 1-oz (30 mL) shots. If you don't have an espresso machine, brew triple-strength espresso in a drip coffee machine.
