This exotic fruit salad is a bit of an indulgence to treat friends and family.
Ingredients
- 1/2 pineapple 1/2 pineapple
- 1 papaya 1 papaya
- 1/2 pomegranate 1/2 pomegranate
- 3 mineolas 3 mineolas or tangerines or clementines
- 2 kiwifruit 2 kiwifruit
- 2 tbsp lime juice 2 tbsp lime juice
- 1 tbsp liquid honey 1 tbsp liquid honey
- 1/2 tsp grated gingerroot 1/2 tsp grated gingerroot
- 1 star fruit , sliced1 star fruit, sliced
Preparation
Cut remaining mineola in half; juice half and set juice aside. Peel and section remaining half; add to bowl.
In separate bowl, whisk together reserved mineola juice, lime juice, honey and ginger; pour over fruit, tossing to combine. Cover and refrigerate for 1 hour or up to 24 hours.
Garnish with star fruit.
