Fennel Gratin

Ingredients:

2 fennel bulbs (cut_in half lengthwise)
2 tbsp (25 mL) extra-virgin olive oil
1/2 cup (125 mL) fresh bread crumbs
1/4 cup (50 mL) chopped fresh basil or italian parsley
1/4 cup (50 mL) grated provolone cheese
2 tbsp (25 mL) grated parmesan cheese
1/2 tsp (2 mL) grated lemon rind
1/2 tsp (2 mL) pepper
Preparation:
Place, cut side up, in shallow baking dish. Drizzle with oil. Stir together bread crumbs, basil, provolone and Parmesan cheeses, lemon rind and pepper; sprinkle over fennel. Bake in 375°F (190°C) oven for 20 to 25 minutes or until tender and cheese is golden brown.
