Fennel Gratin

Ingredients
- 2 2fennel bulbfennel bulbs, cut in half lengthwise
- 2 tbsp 2tbspextra-virgin olive oil
- 1/2 cup 1/2cupfresh bread crumbs
- 1/4 cup 1/4cupchopped fresh basil or Italian parsley
- 1/4 cup 1/4cupgrated provolone cheese
- 2 tbsp 2tbspgrated Parmesan cheese
- 1/2 tsp 1/2tspgrated lemon rind
- 1/2 tsp 1/2tsppepper
Preparation
Place, cut side up, in shallow baking dish. Drizzle with oil. Stir together bread crumbs, basil, provolone and Parmesan cheeses, lemon rind and pepper; sprinkle over fennel. Bake in 375°F (190°C) oven for 20 to 25 minutes or until tender and cheese is golden brown.
