Raw broccoli may not be a common salad ingredient, yet its colour and crunch make it wonderfully suited to the peppers, red onion, romaine and feta in this mix. You can use raw cauliflower instead of broccoli.

Ingredients

  • 4 cups chopped broccoli florets and stems, diced and peeled
  • 1 sweet red pepper, finely chopped
  • 1 sweet yellow pepper, finely chopped
  • 1 cup diced red onions
  • 1/2 cup coarsely crumbled feta cheese
  • 1/4 cup raisins
  • 2 cups shredded romaine lettuce
  • Dressing:
  • 1/4 cup lemon juice
  • 1/4 cup extra virgin olive oil
  • 1/2 tsp salt
  • 1/2 tsp pepper

Preparation

In large bowl, toss together broccoli, red and yellow peppers, onion, feta cheese and raisins; set aside.

Dressing: In small bowl, whisk lemon juice, oil, salt and pepper; pour over broccoli mixture and gently toss to coat. Cover and let stand for 1 hour. (Make-ahead: Refrigerate in airtight container for up to 2 days.) Serve on bed of romaine lettuce.
