The bran, nuts and raisins give an added boost of fibre. You can use 1 cup (250 mL) plain yogurt instead of the bananas and water.

3 cups (750 mL) Fibre muffin Mix
1 egg
3/4 cup (175 mL) mashed bananas or unsweetened applesauce
1/4 cup (50 mL) water
2 tbsp (25 mL) vegetable oil
Preparation:
Place muffin mix in bowl. Whisk together egg, bananas, water and oil; pour over mix and stir just until moistened.
Spoon into greased or paper-lined muffin cups. Bake in 375°F (190°C) oven for about 30 minutes or until tops are firm to the touch.

6 cups (1.5 L) all-purpose flour
2 cups (500 mL) granulated sugar
2 cups (500 mL) natural bran
2 cups (500 mL) raisins
1-3/4 cups (425 mL) skim milk powder
1-1/4 cups (300 mL) all-Bran cereal
1 cup (250 mL) chopped almonds or unsalted peanuts
1/4 cup (50 mL) baking powder
1 tbsp (15 mL) salt
2 tsp (10 mL) nutmeg
1 tsp (5 mL) baking sodaIn bowl, combine flour, sugar, natural bran, raisins, milk powder, bran cereal, almonds, baking powder, salt, nutmeg and baking soda. Refrigerate in airtight container for up to 4 weeks. Stir well to use.
Makes 12 cups.
