1. Place greens in bowl or clean sink filled with cold water. (Running water over greens can bruise and damage delicate leaves.)

2. Swish greens around gently with your hands to remove fine grit. Lift greens into spinner instead of pouring or draining so grit doesn't resettle into leaf folds.

3. Spin greens for a few seconds, draining spinner between spins. If water still looks gritty, repeat the process.

No salad spinner? Lay "lifted" greens on clean tea towel or pillowcase. Gather edges to make bundle and shake gently.
