Four-Fruit July Jam
This gorgeous jam, often called Jewel Jam because of its ruby colour, is one of Canada's finest traditional preserves. Prepare the fruit leisurely, while sitting out in the garden under a tree.
Servings: Ten 8 oz (250 mL) jars
Ingredients:

4 cups (1 L) pitted sour red cherries
4 cups (1 L) stemmed red currants
8 cups (2 L) granulated sugar
4 cups (1 L) raspberries
4 cups (1 L) topped and tailed green gooseberries
Preparation:
Combine the cherries and 2 cups (500 mL) of the sugar in a large preserving kettle. Bring to the boil over high heat and boil vigorously for 5 minutes, stirring almost constantly.
Stir in the gooseberries and another 2 cups (500 mL) of the sugar. Return to the boil and cook 5 minutes. Add the currants, raspberries and the rest of the sugar. Bring back to the boil again, and boil, stirring constantly, until the jam sets, about 5 to 8 minutes.
Remove from the heat, skim and stir for 5 minutes. Pour into hot sterilized jars and seal.
