French-Toasted Banana Sandwich

Sandwiches for breakfast? Why not! If you don't like peanut butter, you can still make the sandwiches. Just use your favourite jam or honey Instead.

Ingredients

  • 4 slices whole grain bread
  • 1 tbsp peanut butter
  • 2 bananas
  • 2 eggs
  • 1/3 cup milk
  • 1/2 tsp vanilla
  • 1 pinch cinnamon
  • 1 pinch salt
  • 2 tsp butter

Preparation

Lay bread on counter. Spread peanut butter over each slice. Peel bananas; place on cutting board. Cut each lengthwise into 4 slices. Cover 2 of the bread slices with bananas. Top with other slices; lightly press sandwiches together.

Break eggs into pie plate; add milk, vanilla, cinnamon and salt. Whisk with fork.

Place sandwiches in egg mixture. Soak until half of the egg mixture has been absorbed.

Place one lifter under and second lifter over each sandwich; press to hold sandwich together and turn. Let soak until all egg mixture is absorbed.

Place skillet over medium-high heat. Add butter, swirling it around pan. Add sandwiches; cook for about 3 minutes or until golden brown underneath.

Using two lifters as before, turn sandwiches over; cook until golden brown underneath.
