Fresh Coriander Chutney
This fresh, slightly sour condiment is often used as an accompaniment to dishes such as Leek Pastries with Mild Spices (Boulani). We mashed the garlic to blend smoothly with no chunky surprises.

2 cloves garlic
1/4 tsp (1 mL) salt
1 cup (250 mL) coarsely chopped fresh coriander
1 cup (250 mL) chopped peeled seeded cucumber
1/4 cup (50 mL) white vinegar
1/4 tsp (1 mL) pepper
Pinch cayenne pepper
Preparation:
On cutting board and using side of knife, mash garlic with salt until in smooth paste; set aside.
In food processor, whirl coriander with cucumber until smooth. Add vinegar, pepper and cayenne; whirl to blend. Stir in garlic paste. (Make-ahead: Refrigerate in airtight container for up to 5 days.)
