Fresh Corn Relish
Servings: 8 1/2 cup (125 mL)
Ingredients:

1 tbsp (15 mL) pickling spice
1/2 cup (125 mL) cider vinegar
1/3 cup (75 mL) each granulated sugar and water
1 tsp (5 mL) salt
half red onion, sliced
half sweet red pepper, diced
1 cup (250 mL) corn kernels
half english cucumber
Preparation:
In saucepan, toast pickling spice over medium heat, swirling pan, for 1 minute. Add cider vinegar, sugar, water and salt ; bring to boil. Reduce heat; simmer for 5 minutes.
In bowl, mix onion, red pepper, corn kernels and English cucumber. Strain hot liquid over top. Refrigerate for 20 minutes or for up to 3 days.
