Fresh Corn Relish
This recipe makes 8 1/2 cup (125 mL) servings
Ingredients
- 1 tbsp pickling spices
- 1/2 cup cider vinegar
- 1/3 cup granulated sugar
- 1/3 cup water
- 1 tsp salt
- 1/2 red onion, sliced
- 1/2 sweet red pepper, diced
- 1 cup corn kernels
- 1/2 English cucumber
Preparation
In saucepan, toast pickling spice over medium heat, swirling pan, for 1 minute. Add cider vinegar, sugar, water and salt ; bring to boil. Reduce heat; simmer for 5 minutes.
In bowl, mix onion, red pepper, corn kernels and English cucumber. Strain hot liquid over top. Refrigerate for 20 minutes or for up to 3 days.
