Replace the ham's cranberry sauce with this salsa. There's enough for 15 servings and it's easy to double.
Ingredients
- 2 cups chopped fresh pineapple , (about half pineapple)2 2cups cupschopped fresh pineapple, (about half pineapple)
- 1 mango , peeled and chopped1 1mangomangoes, peeled and chopped
- 1/4 finely chopped red onion 1/4 1/4finely chopped red onionred onions
- 2 tbsp orange juice 2 2tbsp tbsporange juice
- 1 tbsp minced jalapeño peppers 1 1tbsp tbspminced jalapeño pepperjalapeño peppers
- 1 tbsp finely chopped fresh mint 1 1tbsp tbspfinely chopped fresh mint
- 1 tbsp liquid honey 1 1tbsp tbspliquid honey
Preparation
In bowl, combine pineapple, mango, onion, orange juice, jalapeño pepper, mint and honey. (Make-ahead: Cover and refrigerate for up to 24 hours.)
