Fresh Pineapple Salsa

Replace the ham's cranberry sauce with this salsa. There's enough for 15 servings and it's easy to double.

  • 2 cups 2cupschopped fresh pineapple, (about half pineapple)
  • 1 1mangomangoes, peeled and chopped
  • 1/4 1/4finely chopped red onionred onions
  • 2 tbsp 2tbsporange juice
  • 1 tbsp 1tbspminced jalapeño pepperjalapeño peppers
  • 1 tbsp 1tbspfinely chopped fresh mint
  • 1 tbsp 1tbspliquid honey

In bowl, combine pineapple, mango, onion, orange juice,  jalapeño pepper, mint and honey. (Make-ahead: Cover and refrigerate for up to 24 hours.)
