Buy turkey cutlets or make your own by cutting a single turkey breast crosswise into 1-inch (2.5 cm) thick slices. Pound slices to 1/2-inch (1 cm) thickness. Serve with lemon wedges.

1/4 cup (50 mL) extra-virgin olive oil
3 cloves garlic, minced
2 tbsp (25 mL) minced fresh sage
1/2 tsp (2 mL) salt
1/4 tsp (1 mL) pepper
1 lb (500 g) turkey or chicken cutlets or scaloppine
Preparation:
In shallow bowl, whisk together oil, garlic, sage, salt and pepper. Add turkey, turning to coat. Cover and refrigerate for 2 hours. (Make-ahead: Refrigerate for up to 4 hours.)
Place on greased grill over medium-high heat; brush with remaining marinade. Close lid and grill, turning once, until no longer pink inside, about 6 minutes.
