Ingredients

  • 1/2 cup cornmeal 1/2 cup cornmeal

Preparation

Trim tops and tails off okra. Cut each into thirds; set aside.

In large bowl, whisk together cornmeal, flour, baking powder and egg; stir in buttermilk until smooth.

Meanwhile, in skillet, heat enough oil to come 1 inch (2.5 cm) up side to 375°F (190°C). In batches, stir okra into buttermilk mixture. With fork or fingers, transfer okra to skillet, shaking off extra batter; fry until crispy and golden brown, about 3 minutes.

Season with salt to taste.
