This is an intriguing and fun way to serve garlic bread.

Ingredients

  • 1/2 baguette
  • 24 cherry tomatoes
  • 1/4 cup extra-virgin olive oil
  • 2 cloves garlic, minced
  • 1/2 tsp sweet paprika
  • 1/2 tsp dried Italian herb seasoning
  • 2 tbsp grated romano cheese, (optional)

Preparation

Cut baguette in half lengthwise; cut into 1-inch (2.5 cm) chunks. Alternately skewer 3 pieces of bread and 2 tomatoes onto each of 12 metal or soaked wooden skewers.

In small bowl, combine oil, garlic, paprika and herb seasoning; brush over skewers. (Make-ahead: Cover and set aside for up to 2 hours.)

Place skewers on greased grill over medium heat; close lid and grill, turning once, until golden and crisp, about 8 minutes. Sprinkle with cheese (if using).

Additional information : Variation
Southwestern Garlic Bread Skewers: Replace paprika with chili powder and Italian herb seasoning with dried oregano.
