Garlic Spinach

Ingredients:

1 bag (10 oz/284 g) spinach, trimmed
1tsp (5 mL) extra-virgin olive oil
1 clove garlic, minced
1/4 tsp (1 mL) each salt and pepper
Lemon
Preparation:
Steam spinach until wilted; press out any liquid. In skillet, heat olive oil over medium heat; fry garlic, salt and pepper until fragrant, about 20 seconds. Add spinach; toss until hot. Squeeze lemon over top, if desired.
