Ingredients
- 1-1/2 cups dried large lima beans 1-1/2 1-1/2cups cupsdried large lima beandried large lima beans

- 1/4 tsp ground cumin 1/4 1/4tsp tspground cumin
- 3 cups chopped tomatoes 3 3cups cupschopped tomatotomatoes

- 1/4 tsp pepper 1/4 1/4tsp tsppepper
- 1/2 tsp grated lemon rind 1/2 1/2tsp tspgrated lemon rind
- 1 tbsp lemon juice 1 1tbsp tbsplemon juice
Preparation
In pot of boiling water, cook beans for 45 minutes or until tender; drain.
In saucepan, heat oil over medium heat; cook garlic, onion, oregano and cumin, stirring often, for 8 minutes or until golden.
Add tomatoes; cook for 10 minutes. Add beans, 1/2 cup (125 mL) water, salt and pepper; cook, stirring, for 10 minutes or until coated. Add lemon rind and juice.
