Gin Chiller

Refreshing and not too sweet, this mix of lichees and cucumber makes a delightfully unusual drink for a summer evening.

Ingredients

  • ice cubes
  • 1-1/2 oz 1-1/2ozgin
  • 2 tbsp 2tbspsimple syrup
  • 3 tbsp 3tbspsparkling water
  • 3 thin slices 3thin slicescucumber
  • 3 3drained canned lichees in syrup

Preparation

Fill cocktail shaker with ice. Add gin and simple syrup; shake vigorously to blend and chill. Strain into glass; top with sparkling water. Stir in cucumber and lichees.

Simple Syrup
To make simple syrup, bring equal parts sugar and water to boil. reduce heat and Simmer, stirring, until sugar dissolves, about 1 minute. Let cool completely before using.
