Ginger Green Beans
Oriental flavours pick up the taste of these beans. Because they are cooked quickly in boiling water, the nutrients aren\'t all leached out.

1 lb (500 g) green or yellow beans, trimmed
1 tbsp (15 mL) sesame oil
1 tsp (5 mL) grated gingerroot
1 clove garlic, minced
1/3 cup (75 mL) chicken stock
1/4 tsp (1 mL) each salt and pepper
1/4 cup (50 mL) toasted slivered almonds
Preparation:
Remove stem ends from beans; cut in half. In deep skillet, heat oil, ginger and garlic over medium heat for 1 minute or until fragrant. Add chicken stock, salt and pepper; bring to boil.
Add beans; cover and cook, stirring occasionally, for about 5 minutes or until bright green and tender-crisp. Sprinkle with almonds.

TIP: Toast almonds on baking sheet in 350°F (180°C) oven for 3 to 10 minutes or until golden.
