Glazed Fish Fillets

Tested Till Perfect

Flavour these fillets with any number of glazes. Serve with green beans and rice pilaf.

    4 125 g halibut, haddock or cod fillets
    1/3 cup light mayonnaise
    4 tsp prepared pesto sauce

Preparation:

Place fillets on greased or foil-lined rimmed baking sheet. Stir mayonnaise with pesto; spread over fish. Broil for 5 minutes or until golden and bubbly and fish flakes easily when tested with fork.

 

Additional Information

  • Tip: Vary the flavour of Glazed Fish Fillets by substituting any of the following toppings. To 1/3 cup (75 mL) light mayonnaise, add:

    2 tbsp (25 mL) finely chopped black olives, 1 tsp (5 mL) grated lemon rind, 1 tbsp (15 mL) lemon juice, 2 tsp (10 mL) chopped fresh thyme and pinch pepper.

    2 tsp (10 mL) finely grated gingerroot and 2 green onions, chopped.

    4 tsp (20 mL) finely chopped drained oil-packed sun-dried tomatoes and 2 tsp (10 mL) chopped fresh parsley.
