Goat Cheese Polenta

Make this classic a tradition for family suppers.

Servings: 4

Ingredients:

    4 cups (1 L) water
    1 cup (250 mL) cornmeal
    2 tbsp (25 mL) butter
    1 tsp (5 mL) each salt and pepper
    1/2 cup (125 mL) goat cheese
    1 green onion, chopped

Preparation:

In saucepan, bring 4 cups (1 L) water to boil. In thin steady stream, whisk in cornmeal until thickened. Cook over medium-low heat, stirring with wooden spoon, until thick enough to mound on spoon, 10 minutes.

Remove from heat. Stir in butter, salt, pepper, goat cheese and green onion.
