Ingredients

  • 3 slice whole wheat bread
  • 1 pkg frozen fish fillets, (cod, sole or haddock), thawed
  • 1 egg
  • 2 green onions, thinly sliced
  • 1 stalk celery, minced
  • 1/2 tsp each salt and pepper
  • 1 tbsp vegetable oil

Preparation

In food processor, pulse bread to make 2 cups (500 mL) crumbs. Transfer to bowl.

Add fish to food processor and finely chop; add to bowl. Ad egg, onions, celery, salt and pepper to bowl; mix well.

Using wet hands, shape by heaping 1/4 cups (50 mL) into eight 1/2-inch (1 cm) thick patties. (Make-ahead: Cover and refrigerate for up to 24 hours.)

In non-stick skillet, heat oil over medium heat; fry patties, turning once, until golden, about 10 minutes.
