A salade composée— arranged rather than tossed — is an attractive way to serve beans. The hard-cooked eggs, tomatoes and black olives that surround the dressed green beans are perfect flavour and colour complements.
Ingredients
Preparation
Dressing: In small bowl, whisk together oil, parsley, vinegar, garlic, salt and pepper.
In separate bowl, toss beans with half of the dressing; arrange in centre of serving platter or bowl. Cut each tomato into 6 wedges and each egg into quarters; arrange around beans. Drizzle remaining dressing over top. Sprinkle with olives.
