A quick sauté of yellow pepper with tomato, garlic and oregano adds colour and a tasty crunch to beans.
Ingredients
- 1 tbsp vegetable oil 1 1tbsp tbspvegetable oil
- 1 onion , finely chopped1 1oniononions, finely chopped
- 1 clove garlic , minced1 1clove garliccloves of garlic, minced
- 1/2 sweet yellow pepper , diced1/2 1/2sweet yellow pepper or sweet green pepper, diced
- 1 tbsp chopped fresh oregano leaves , or 1/2 tsp/2mL dried1 1tbsp tbspchopped fresh oregano leaffresh oregano leaves, or 1/2 tsp/2mL dried
- 1/4 tsp salt 1/4 1/4tsp tspsalt
- 1/4 tsp pepper 1/4 1/4tsp tsppepper

- 1 lb green beans , cooked1 1lb lbgreen beangreen beans, cooked
Preparation
In large skillet, heat oil over medium heat; fry onion, garlic, yellow pepper, oregano, salt and pepper, stirring occasionally, until onion is softened, about 5 minutes. Add tomato; cook, stirring, for 1 minute. Add green beans; toss to combine and heat through if necessary.
