Fragrant Thai jasmine rice is a subtle contrast to the intensely flavoured chili.

Preparation:

In saucepan, bring 4 cups (1 L) water and salt to boil; stir in rice. Cover and reduce heat to low; simmer for 20 minutes or until no liquid remains. Stir in coriander and onions; fluffing with fork.
