Greens with Raspberries, Pine Nuts and Champagne Dressing

    12 cups (3 L) torn mixed greens
    1 cup (250 mL) raspberries
    1/4 cup (50 mL) toasted pine nuts
    Champagne Dressing:
    1/4 cup (50 mL) canola or extra-virgin olive oil
    2 tbsp (25 mL) Champagne vinegar or white wine vinegar
    1/4 tsp (1 mL) each salt and pepper

Preparation:

Champagne Dressing: In large bowl, whisk together oil, vinegar, salt and pepper.

Add mixed greens and toss to coat. Arrange on plates; sprinkle with raspberries and pine nuts.
