Well-dressed salad is a light and refreshing opening course for a rich raclette main course. The salad is just fine on its own or with the Grilled Shrimp Skewers with Vegetable Skewers.

Ingredients

  • 2 tbsp minced shallot or green onion
  • 2 tbsp sherry vinegar or wine vinegar
  • 1 tbsp finely chopped fresh tarragon
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 cup extra-virgin olive oil
  • 1 pkg hydroponic watercress, (or 4 cups/1 L watercress, 1 bunch), stemmed
  • 3 cups torn red leaf lettuce
  • 3 cups torn frisée lettuce

Preparation

In large bowl, whisk together minced shallot, sherry vinegar, tarragon, salt and pepper; whisk in oil. (Make-ahead: Refrigerate in airtight container for up to 3 days; whisk.)

Add watercress and red leaf and fris?lettuces; toss to coat.
