Greens with Tarragon Vinaigrette
Well-dressed salad is a light and refreshing opening course for a rich raclette main course. The salad is just fine on its own or with the Grilled Shrimp Skewers with Vegetable Skewers.

2 tbsp (25 mL) minced shallot or green onion
2 tbsp (25 mL) sherry vinegar or wine vinegar
1 tbsp (15 mL) finely chopped fresh tarragon (or 1/2 tsp/2 mL dried)
1/4 tsp (1 mL) each salt and pepper
1/4 cup (50 mL) extra-virgin olive oil
1 pkg (8 oz/250 g) hydroponic watercress (or 4 cups/1 L watercress, 1 bunch), stemmed
3 cups (750 mL) torn red leaf lettuce
3 cups (750 mL) torn frisée lettuce
Preparation:
In large bowl, whisk together minced shallot, sherry vinegar, tarragon, salt and pepper; whisk in oil. (Make-ahead: Refrigerate in airtight container for up to 3 days; whisk.)
Add watercress and red leaf and frisée lettuces; toss to coat.
