Warm, grilled chicken sandwiches are irresistable paired with crunchy Broccoli Slaw (recipe like below). One serving of our creamy veggie slaw provides 104 per cent of your daily Vitamin C requirement.
Ingredients
- 2 tbsp vegetable oil
- 1 tbsp lime juice
- 2 garlic cloves, minced
- 1 tsp ground cumin
- 1/2 tsp chili powder
- 1/4 tsp salt
- 4 boneless skinless chicken breasts
- 4 crusty oval buns, halved
- 4 romaine leaves, shredded
- 1 tomato, sliced
- Jalapeno Mayo:
- 1/3 cup light mayonnaise
- 2 tbsp minced jalapeño peppers
- 2 tbsp chopped fresh coriander
- 2 tsp lime juice
Preparation
In large bowl, combine oil, lime juice, garlic, cumin, chili powder and salt ; add chicken and turn to coat. Let stand for 10 minutes. (Make-ahead: Cover and refrigerate for up to 24 hours.)
Place chicken on greased grill over medium-high heat; close lid and cook, turning once, until no longer pink inside, 12 minutes. Let cool; cut into thick slices.
Jalapeño Mayo: Meanwhile, in small bowl, stir together mayonnaise, jalapeño, coriander and lime juice.
Toast buns, cut sides down, on grill, about 1 minute. Spread cut sides with mayo. Sandwich chicken, lettuce and tomato in buns.
Serve with: Broccoli Slaw
