Ingredients

  • 4 firm ripe peaches , halved and pitted4 firm ripe peaches, halved and pitted
  • 1 tbsp butter , melted1 tbsp butter, melted
  • 1/4 cup liquid honey 1/4 cup liquid honey
  • Filling
  • 3/4 cup ricotta cheese 3/4 cup ricotta cheese
  • 2 tsp liquid honey 2 tsp liquid honey
  • 1/2 tsp grated lemon rind 1/2 tsp grated lemon rind
  • vanilla dash vanilla

Preparation

Filling:
In bowl, combine ricotta cheese, honey, lemon rind and vanilla; set aside.

Brush cut sides of peaches with butter. Place, cut side down, on greased grill. Close lid and grill over medium-high heat until peaches are softened and grill-marked, 8 to 12 minutes.

Spoon heaping 1 tbsp (15 mL) ricotta mixture into each peach; drizzle with honey.
