Grilled Peanut Tofu Salad
Quick, easy and really delicious, grilled tofu comes to life in a salad.

1/3 cup (75 mL) natural peanut butter
1/4 cup (50 mL) lime juice
2 cloves garlic, minced
2 tbsp (25 mL) each liquid honey and soy sauce
1/2 tsp (2 mL) each salt and pepper
1 pkg (454 g) firm tofu
1 tbsp (15 mL) vegetable oil
8 cups (2 L) torn leaf lettuce
2 cups (500 mL) shredded carrots
1 cup (250 mL) bean sprouts
2 green onions, sliced
1/4 cup (50 mL) chopped roasted peanuts
Preparation:
In bowl, whisk together peanut butter, lime juice, garlic, 2 tbsp (25 mL) hot water, honey, soy sauce and half each of the salt and pepper. Set aside.
Cut tofu horizontally into 4 slices; pat dry. Brush with oil; sprinkle with remaining salt and pepper. Place on greased grill over medium-high heat; close lid and grill, turning once, until marked, about10 minutes. Cut each into quarters.
Arrange lettuce on 4 plates. Top each with 4 pieces tofu, carrots and bean sprouts. Drizzle with dressing; sprinkle with green onions and peanuts.
