Grilled Rosemary-Mustard Chicken

Tender chicken thighs make a juicy canvas for painting on this rosemary and mustard glaze. A combination of Dijon and grainy mustard gives a rich, slightly spicy flavour and pleasant crunchy finish. Serve with a simple salad or steamed rice.

  • 1-1/2 tsp 1-1/2tspgrainy mustard
  • 1-1/2 tsp 1-1/2tspDijon mustard
  • 1-1/2 tsp 1-1/2tsplemon juice
  • 1 tsp 1tspliquid honey
  • 3/4 tsp 3/4tspchopped fresh rosemary
  • 1 lb 1lbboneless skinless chicken thighboneless skinless chicken thighs
  • 1 pinch 1pinchsalt
  • 1 pinch 1pinchpepper

Whisk together grainy and Dijon mustards, lemon juice, honey and rosemary; set aside.

Sprinkle chicken with salt and pepper. Place on greased grill over medium-high heat; close lid and grill, turning once, for 8 minutes. Brush with mustard mixture; cook, turning once, until juices run clear when chicken is pierced, about 2 minutes. Let stand for 5 minutes before serving.
