Grilled Salmon with Prosciutto
Salmon matched with prosciutto and mustard makes a luscious combination. Halibut, trout or any other firm-fleshed fish also works well. Wide slices of prosciutto guarantee maximum coverage and taste.

1/4 cup (50 mL) Dijon mustard
2 tbsp (25 mL) chopped fresh chives or green onions
1/4 tsp (1 mL) pepper
4 skinless salmon fillets (each 6 oz/175 g)
4 thin slices prosciutto (about 2 oz/60 g)
Preparation:
In small bowl, mix together mustard, chives and pepper; spread over both sides of salmon. Place fish, skinned side down, on prosciutto; wrap around fish.
Place fish, prosciutto seam side up, on greased grill over medium heat; close lid and grill, turning once, until fish flakes easily when tested, about 10 minutes.
