Spiedini are Italian brochettes threaded with chunks of baguette and other tasty things, such as sausage and onion. Serve with mustard, the Balsamic Grilled Peppers and a juicy tomato salad.

Ingredients

  • 4 Italian sausages, (about 1 lb/500 g)
  • 2 tbsp extra-virgin olive oil
  • 1 clove garlic, minced
  • 1 Pinch each salt and pepper
  • 1 baguette, cut into 1-inch (2.5 cm) cubes
  • 1/2 red onion, cut into 1-inch (2.5 cm) cubes

Preparation

Prick sausages with fork. Place on microwaveable plate; cover and microwave at high until no longer pink, about 5 minutes. (Make-ahead: Refrigerate until cold; wrap and refrigerate for up to 24 hours.) Cut into 1-1/2-inch (4 cm) pieces.

Meanwhile, in bowl, whisk together oil, garlic, salt and pepper. Alternately thread sausage, bread cubes and onion onto metal or soaked wooden skewers; brush bread with oil mixture.

Place skewers on greased grill over medium heat; close lid and grill, turning three times, until crisped, browned and onion is tender, about 10 minutes.
