Heirloom Tomatoes with Basil

Peruse local markets for a selection of tomatoes in different sizes, shapes and colours. If you can't find heirloom tomatoes, don't worry – this salad is delicious with any variety. While you're shopping, look for local feta or other dry salty cheeses and crusty bread to serve alongside.

    2 lb (1 kg ) mixed heirloom_tomatoes    
    Pinch each salt and pepper  
    1 tbsp (15 mL) extra-virgin olive oil  
    1 tbsp (15 mL) wine_vinegar 
    4 leaves fresh basil,slivered

Preparation:

Cut tomatoes into 1/2-inch (1 cm) thick slices; arrange in centre of platter. Sprinkle with salt and pepper; drizzle with oil and vinegar. Sprinkle with basil.
