Herb Potato Wedges

Kids love to make oven fries to serve with a variety of main courses.
Ingredients
- 1 tbsp vegetable oil
- 1/2 tsp dried thyme
- 1/2 tsp paprika
- 1/4 tsp salt
- 2 lb (4) baking potatoes
Preparation
Place oven rack in centre of oven; turn on heat to 475°F (240°C).
In large bowl, stir together oil, thyme, paprika and salt ; set aside.
With vegetable brush, scrub potatoes and peel if desired. Place on cutting board; using chef's knife, cut potatoes in half lengthwise. Cut each half lengthwise into 4 wedges. Add potatoes to bowl; using rubber spatula, turn to coat well.
Spread in single layer on rimmed baking sheet; bake for 15 minutes.
Wearing oven mitts, remove baking sheet from oven and set on rack. Turn potatoes with lifter. Return potatoes to oven and bake until crisp and golden on both sides, about 20 minutes.
