Ingredients

  • 8 cups water 8 cups water
  • 2-3/4 lb turkey wings 2-3/4 lb turkey wings or chicken wings

Preparation

In stockpot or Dutch oven, bring water, turkey wings, celery, onion, garlic, salt, peppercorns and bay leaves to boil; reduce heat and simmer until reduced to about 6 cups (1.5 L), about 1 hour. Strain and skim off foam.
