Honey Dijon Chicken Thighs
This dressed-up chicken dish becomes elevated when served alongside bitter steamed rapini and Creamy Herbed Noodles (see recipe link below). If you don't like rapini, swap for steamed broccoli instead.

8 chicken thighs, skinned
2 tbsp (25 mL) each liquid honey and dijon mustard
1 tbsp (15 mL) chopped fresh thyme
1 tbsp (15 mL) cider vinegar
1/2 tsp (2 mL) each salt and pepper
Preparation:
Place chicken, bone side up, on greased grill over medium-high heat; close lid and cook for 10 minutes.
Meanwhile, in small bowl, stir together honey, mustard, thyme, vinegar, salt and pepper; brush one-third over chicken. Turn chicken and brush again. Close lid and cook, brushing halfway through, for 10 minutes or until juices run clear when chicken is pierced.
Serve with: Creamy Herbed Noodles
